Salad Dip Appetizer



Oh, wow. Has it really been over a month since I've posted? Yipes! I have been spending lots of time on the bike in my spare time so life has been very good to me. I must say, cyclers are the most friendly, helpful people and I love the groups I've been riding with. Even better: I'm taking my boys out and getting them hooked on this fantastic sport. The daughter? Well, I'll have to hope she finds it in her own time if she so chooses.

I also had the chance to go to the Kensington Market on a field trip with the school. What great flavours and spices! I picked up Chocolate Tea, French Blue Cheese and Double Chocolate Scones. I'm already missing the authentic tacos we had on the sidewalk while listening to live music played a few steps from our table. Love visits into the city!

So that's a mini update on where I've been sandwiching my time between work and home. Where have these early summer months been finding you? I hope you've had the chance to also enjoy the great outdoors.

In honour of spending more time outside and less time in a hot kitchen, I will pass along a new favourite of mine.


This addictive appetizer/snack is one given to me by a friend (thanks Krissy!). It is perfect for these beautiful summer weekends that lay ahead.


Salad Dip Appetizer







Cucumber Dressing
One head lettuce; chopped small
Chopped Fresh Tomatoes
Chopped Onions (optional)
Sliced Black Kalamata Olives
Freshly Grated Parmesan Cheese
Tacos for Dipping (I like the lime ones!)

Take a 9x12 glass casserole dish and pour a small amount of dressing in bottom. Just enough to spread around and cover the bottom. You don't need a lot.

Layer all lettuce on top of dressing, then tomatoes, then onions, then olives. Sprinkle parmesan cheese on top and serve.

I don't know why this is so good. It's basically salad on a taco, but believe me, you'll want to inhale this!
