Well, she's done it again. Denise has whipped up another fantastic recipe that is just too good to keep to myself. We had it last night and the kids loved it too. It's a perfect meal for this time of year when I find myself diving into lots of cookie dough batter and baked goods as I prepare for Christmas.
Denise's Napa and Arugula Soup
1 med. onion; chopped
1 carrot; chopped
2 med. potatoes; peeled and sliced
1 head napa cabbage; chopped
1/2 cloves garlic; minced
dash of hot sauce
5-6 cups vegetable stock
2 handfuls baby arugula
2 tbsp. parmesan cheese
Melt 2 tbsp. butter and sautee onions until soft. Add carrots and potatoes and cook for another 5 minutes. Add cabbage and garlic; stir for another minute or so. Add stock, hot sauce and arugula. Bring to a boil and simmer for 10 minutes (covered).
Throw in blender and puree until smooth. Garnish with parmesan cheese.
(for a time saver, use a can of potatoes and pre-chopped garlic in the jar)
