Meatball Sub Casserole

Meatballs Good. That's all I have to say.

1/3 cup minced onion
1/4 cup bread crumbs
3 TB. grated
Parmesan cheese
1 pound ground beef
2 mild italian sausages, case removed
1 loaf Italian bread,
cut into 1 inch cubes
1 (8 oz) package cream cheese
(softened)
1/2 cup Mayo
1 tsp oregano
1/4 tsp pepper
2 cups shredded mozzrella
3 cups spaghetti sauce
1 cup water
2 cloves garlic, minced

Preheat oven to 400 degrees

Mix together onions, bread crumbs, parmesan cheese, ground beef and sausage. Roll into 1" balls and place in baking dish. Bake for 15-20 minutes or until beef is no longer pink in the middle

Arrange the bread cubes in single layer in 9x13 baking dish. Mix together the cream cheese, mayo, oregano and pepper until smooth. Spread this mixture over each bread cube. Sprinkle with 1/2 cup mozzarella cheese.

In large bowl, mix together sauce, water and garlic. Gently stir in meatballs. Pour over the bread and cheese mixture in pan. Sprinkle with remaining mozzarella cheese.

Bake 30 minutes or until heated through. :)

  2. Actually, it's not too bad. It's not drowning in a lot of tomato sauce. I'm sure Brad would consider this a nice, light snack! :-D

  4. ...one more thing, have you seen the movie Julie and Julia?? if you haven't you should, we watched it a couple of weeks ago with the kids and we all enjoyed it, thought about you while watching it too! Hugs, Karin

    I saw your "a La Mode" bit about Adam and his movie with snacks in bed. Not sure if you know this or not but you are doing some wonderful stuff as parents and this is one of them. Your kids are really lucky. Now, about letting him have a Heineken with his snack... I'm more of a Stella Artois kinda guy myself.....

Thanks Tracey! was it the homewithtwins one or Kariñosa? ... the homewithtwins came about when I was on bed rest for 6 weeks before our twins were born, Curtis actually created an account for me and that stayed like that since. Now my display name is actually a play on words, in spanish the word is "cariñosa" which means the loving or affectionate one, my aunt used to call me that when I was little, so I just combined it with my name :)
